Firstly we need 2cup of biryani rice, khada garam masala(bay leaves,javetri flower, black pepper, long, cinnamon), in handi pour some vegetable oil and add khada garam masala in that any saute it after that add 2 cup biryani rice and pour 4 cup of water( just double amount of rice) then add some salt and leave for simmer it till 3/4 cooked.
Now in other clay handi pour oil for tadka and add cumin seeds (jeera) after that add chopped vegetables (green chili,onion,cauliflower, green peas,tomato) and saute them for 5 minutes after that add all masala( red chilli powder, coriander powder, turmeric powder, salt) and add some paste of ginger and garlic and add 1 cup of water and stir that after 2-3 minutes add shahi biryani masala and cook for another 5-10 minutes and in last pour some desi ghee that will amazing aroma to our biryani.
Now in handi add some cooked vegetables and make layer on that add some 3/4 cooked rice now do this same for 3 to 4 layers, in between layers sprinkle some shahi biryani masala and a few desi ghee. In last do topping with golden fried onions and green coriander and few drops of yellow edible colour for give them yellow colour to half of them.
Now put lid on handi and seal it with wet wheat atta and put on coals for 8-10 minutes now handi veg biryani is ready to eat.
